D'Oh! Dough.

Today's post is about dough, specifically my favourite pizza dough. It's easy to make, fluffy, and very little fuss is required. This is my standard dough, it will be the base of most of my pizza or related posts.


Basic Pizza Dough (Yield 2 Pizzas)

2 1/4 tsp Active Dry Yeast (1-0.8 oz package)
1 tsp Brown Sugar
1 1/2 cups Warm Water
2 Tbsp Olive Oil
1 tsp Salt
3 1/3 cups All Purpose Flour.
(Possible add-ins: garlic powder, dry herbs,  Parmesan cheese)

 There are two methods to this one, if you've had a rough day or week making this by hand is a good way to let off some steam. Something about kneading dough can be pretty therapeutic. I'd leave it up to time, if you've got time on your side give it a go by hand, if you prefer the quick and clean method, go for a mixer( I often opt for my mixer, especially if I'm pressed for time after work).

In a large bowl, dissolve brown sugar and yeast in warm water, let stand to 'bloom' for about 10 minutes. If you're not familiar with yeast, it will get foamy and bubbly, all good things :)

Once bloomed, add the salt, oil, and 1 1/2 cups of flour. Working well to incorporate, gradually add remainder of flour 1/2 cup at  a time (good time for add-ins if you're using any).

When all the ingredients have come together, it should take the shape of a ball. This is where the fun happens. Time to knead! If you're using a mixer with a dough hook attachment, medium speed for 4-5 minutes  should do the trick. If you're kneading by hand, turn the ball out on to a lightly floured surface and stretch the dough using the  heels of your  palms. Stretching and folding the dough on to itself for 6-8 minutes will make the dough much easier to work with. When completed, place dough in a lightly oiled bowl and turn to coat. Cover with some plastic wrap and let sit in a warm place until doubled in size(30 min approx.) Good time to preheat the oven to 425F.

This dough works great in a variety of situations. I always try to have some in the freezer in the off chance that people drop by unannounced. Pick your favourite sauce and toppings and get creative.
It can be used for pizza, calzone/panzos , cheesy bread, and various other creations that need a simple bread base(stay tuned for more of those recipes in the future).

Once dough has doubled on a floured surface you can roll it flat, or  stretch it with your hands to desired shape. Place on baking sheet/pizza pan/oven stone,  add sauce cheese and desired toppings. Bake for 25 minutes, or until cheese is melted, and done to your preference.

Let it sit for a minute or 2, slice it up and you're ready to eat!
